I build castles, places in other games, basically whatever sounds fun/challenging. I built about 1/4 of Balmora before I fully realized how massive of an undertaking it was and scrapped it.
I hate those enemies that blow up. I'll be deep into what I'm building and not paying attention then BOOM!

Yeah if you start off on survival your first tactic IMO should be to hunt down a randomly generated village and then build around it as you go. The buildings there will give you shelter from the dangerous critters that come out at night until you've got good enough food/equipment to survive. The next step is getting the materials to build a bed so that if you die you'll respawn at home. I'm honestly enjoying the survival aspect of the game as much or more than I enjoyed creative mode. I've started off on easy but will probably ramp up the difficulty as needed to keep the game interesting.

I'm not really a GTA fan either but I've played them some. Later games are better when it comes to GTA.

I can't wait to get home and play some Fallout New Vegas. I restarted and it is oddly enjoyable again. I think my problem the last few times I played was that there was simply nothing left to do in the game. I'd completed everything. The fresh start has been good and with all the patches it isn't nearly as glitchy as it was when I started playing on launch day.
