For me, its gotta be Snake Eater for metal gear solid 3.

I really like the one from Peace Walker; Heaven's Divide. Then there's the Halo theme (of any variation really), although I also have a big soft spot for Finish the Fight. It's just a good theme to start the last game of the trilogy off with. Otherwise, uh...
