Many of the wood elf skin tones do look odd. I always go for the light brown shades.
Thankfully you can fix that these days without creating a new character. You just have to go far enough to get to you camp. There will be a magic mirror there that you an use to change your appearance. Not everything is possible to change, but I *think* skin tone is one you can.
The Guardian frustrated me so much when I first started playing BG3. “You want me to decide a character’s appearance based on no backstory?” Lol @ Kane- The Guardian is an NPC and initially an ally. They don’t become a follower, that I know of, but they are very important to the story. They can also potentially be a romance option, I believe, so maybe make them someone you might find attractive. Lol
