I'll drop the subject now.
The difference of course being that nobody buys a driving game to not drive because you can't complete it without driving and nobody buys strategy games to play without strategy because they can be very difficult. Roleplaying games are different because they only require you to assume the vague role of the character that you're playing. They don't require you to fully immerse yourself into it. They're played differently by different people and IMO that is part of their allure.
Roleplaying games are really the only genre that has such a vast number of options for players. You can rush the story and ignore side quests or you can fully delve into the character and in essence, become him.
In shooting games you're basically always forced to shoot your way through the story without experiencing it, the only exception I can think of is the Deus Ex series and the Metro series. In driving games if you don't drive then you don't advance. You can easily play through an entire roleplaying game without ever really feeling the role of the character.
I understand the love to immerse yourself in the game, I try to do this as well, it is what makes RPG's so enjoyable to me. People play these types of games different ways because they are open to be played in this way.
