I spend forever on character creation too. Even in games like Oblivion and Skyrim where you can save faces and I replay old characters like January and Blood Raven, I still often find myself tweaking their appearances. BG3 is doubly worse because once you create your character, you have to do it all over again with your Guardian!
Many of the wood elf skin tones do look odd. I always go for the light brown shades.
Thankfully you can fix that these days without creating a new character. You just have to go far enough to get to you camp. There will be a magic mirror there that you an use to change your appearance. Not everything is possible to change, but I *think* skin tone is one you can.
The Guardian frustrated me so much when I first started playing BG3. “You want me to decide a character’s appearance based on no backstory?” Lol

The Guardian is an NPC and initially an ally. They don’t become a follower, that I know of, but they are very important to the story. They can also potentially be a romance option, I believe, so maybe make them someone you might find attractive. Lol
