I think the 'Souls' franchise made a conscious decision that unforgiving (frustratingly hard) combat is a hallmark of Souls games. They apparently made a conscious effort not to include a difficulty slider. Keeps Souls fans happy but alienates many others. Like me. And perhaps you.
The difficulty in Elden Ring didn't bother me but it was hard to progress when one or two hits would kill you and the controls not wanting to respond properly that eventually got to me. Anyway, even worse news it seems my Xbox Seies S doesn't want to play anymore so it's going to a game store to be sold off. That leaves the Switch and PC left to play.
I'll still give Elden Ring a good review score as it IS a beautiful game, even though it kicked my ass and my Xbox's too apparently :/ .
